With the end of 2021 around the corner, I can’t help but wonder… Where the heck did this year go?! With it’s weird pandemic circumstances, 2021 did have some record breaking real estate market data coming from all sectors. Record breaking sales, low inventory and prices that seem to be moving in an upward direction at a pace we haven’t seen in many years. Currently the low inventory has also pushed a lot of sales into multiple offer scenarios which has been advantageous for sellers. In many cases buyers are patiently waiting for the next home to come on the market within their criteria. I’ve spent lots of hours recently canvassing neighbourhoods and searching for sellers that plan to sell in the coming year. Poke poke! If you’re thinking about selling in the coming months, it wouldn’t be bad to start planning now as the market looks advantageous. Reach out!

Pomegranate Eton Mess Serves 4-6 people
Ingredients:
– 12 Walker’s meringue shells
– 0.5 litre whipping cream
– 1 pomegranate, seeds removed
– 2 tbsp sugar
– 1 cup Pom pomegranate juice
Steps:
1) In a large bowl, whip the cream into soft peaks. Add sugar and whip until stiff. Set aside.
2) Crumble up meringue shells into .5 inch chunks. Set aside.
3) Cut and segment pomegranate. Search ‘How to deseed pomegranate in water’ on Tiktok for a great trick 🙂 Set aside.
4) In the whipping cream, add 3/4 of the crushed meringue shells, 3/4 of the pomegranate seeds and 2 tbsp. of the pomegranate juice. Gently fold until just combined.
5) Pile the mixture into a martini glass, champagne coupe or other pretty stemware. Top with additional pomegranate seeds, crushed meringue and drizzle more juice.
6) Enjoy!
